The soup can be served chunky (above), thickened or pureed (see right). Tofu whipped cream (top right) and chopped parsley (are used for garnishing.

A great squash soup that complements the mild butternut squash flavor with fresh taste of apple. Sweet and fruity and, optionally topped with a scoop of tofu whipped cream, very refreshing and appetite-satisfying.

Get in Advance:

 

5 cups low-salt vegetable broth

24-32 oz butternut squash (one half squash peeled and seeded)

3 med green apples

1 medium to large Yukon Gold potato

3 slices of your favorite bread

½ teaspoon ground rosemary

½ teaspoon marjoram

Ground white pepper to taste

 

Have On Hand:

Chopped parsley

Optional:

For Tofu Whipped Cream (see under Deserts/Snacks):

1 pkg Firm Silken Tofu

Almond milk

Vanilla extract

Ingredients

Description: Get-Butter-Squash-Apple-Potato-4x6

 

Recipe

For 4-6 Portion. Preparation time 1.5 hour.

 

Make Base

Use medium soup pot

Add 5 cups of vegetable broth (1 cup per 4 oz/113 gram of squash)

 

Chop Vegetables and Fruit

Peel and chop butternut squash

Peel and chop potato

Peel, core and chop apples

Cut bread

Add all chopped items into vegetable base

 

Cooking

Add spices (rosemary, marjoram, pepper)

Bring to a boil and let simmer uncovered for 45 min.

 

Serving

Serve as Chunky Soup

Serve chunky in broth as is.

Optionally, mash in the cooking pot some vegetables with a serving spoon to increase the consistency of the soup.

Garnish

Before serving sprinkle with chopped parsley.

 

Serve as Pureed Soup

Let cool down then puree using a blender.

Reheat and serve.

Optionally add a swirl of tofu whipped cream after filling the soup bowls.

 

Tofu Whipped Cream (see 014 under Deserts/Snacks )

¼ pkg of firm Silken tofu

½ teaspoon Vanilla Extract

1 1/2 tablespoons confectioner sugar

1/2 tablespoons Almond Milk

Blend all together, chill for ½-1 hour
