Get in Advance: 1 large onion, chopped (2 cups) 3 celery ribs, chopped 2 garlic cloves, minced 1 teaspoon dried thyme ¼ cup wild rice ¾ cup brown Basmati rice 3 cups low-salt vegetable broth 10 oz fresh whole white mushrooms, quartered ½ cup chopped cilantro 1-2 tablespoons balsamic vinegar Have On Hand: White wine Low-salt vegetable broth |

Recipe (Adapted from Esselstyn p 237): For 2 (generous)-to 3 Portion. Prep time 60 min. Prepare Vegetable
Stock In heavy sauce pan Add ½ cup of white wine Add onions and celery Cook for 5 min Add garlic and thyme Cook for 30 seconds Sautee Rice (Pilaf Method of Cooking
Rice) Add 2 cups of vegetable broth Add wild and brown rice Bring to a boil, cover and let simmer for 55 min (until most of the liquid got adsorbed but some is remaining and rice is tender) While rice is cooking for last 5 min Brown Mushrooms In large non-stick pan over medium heat Add mushrooms; cook 5 min while stirring until brown. Stop when moisture starts to condense into liquid underneath mushrooms. Complete Rice Pilaf Add mushrooms to rice Stir in cilantro, vinegar, pepper (half of a ¼ teaspoon white pepper) Fluff with fork and serve. |
