Get in Advance: 1 pound of mixed mushrooms (shiitake, enoki, shimeji, oyster, crimini, trumet, etc.) 3 cloves of garlic, chopped 2 tablespoons of white rice wine - Sake 1 teaspoon of crushed Sichuan peppercorn 1/4 teaspoon red pepper flakes Big bunch of New Zealand spinach Have On Hand: Basmati rice |

Recipe (Modified to Esselstyn diet from http://appetiteforchina.com) For 2 (generous) - 4 Portion. Prep time 40 min. Cook Basmati
Rice In rice pot cook 1 cup of Basmati rice in 2 cups of water Simmer for 25 min, remove lid at the end to evaporate excessive water Prepare ingredients Wash New Zealand spinach and discard thicker stems Cut mushrooms into ½ inch pieces or half or quarter to similar size Chop garlic cloves Stewin ingredients In deep skillet heat over medium heat Add 1/4 cup of Sake Add garlic and 1/2 teaspoon of Sichuan pepper Stew for about 1 minutes Stew New Zealand spinach Add ½ cup of low-salt low-fat vegetable broth Add mushrooms Simmer with closed cover about 3-5 minutes until tender Add 2 tablespoons of Saki Add ¼ teaspoon of red pepper flakes Stir and Add New Zealand spinach Turnover once so that spinach is covered with base and simmer covered Stew for 2-3 minutes only as long as first spinach leave start to wilt. DO NOT overcook! Ready to Serve Serve with rice. |
