Get in Advance: ½ large onion, chopped ½ red onion, chopped ¾ teaspoon dried rosemary (or ½ tablespoon fresh tarragon and ½ teaspoon fresh rosemary) 1 1/2 cups of cooked white beans (White Great Northern beans) equals 1 15 oz can. 2 tablespoons of white wine vinegar ¼ of a quarter-teaspoon of ground Cayenne pepper ½ of a quarter-teaspoon black pepper. Have On Hand: A fresh spring of rosemary for garnish Crisp bread, broken in pieces for Recipe (Adapted from "Bean by Bean," by Crescent Dragonwagon (Workman, 2012) and modified to low-salt, low-fat diet): For 2-3 portions. Prep time: 60 min. Prepare the
Beans In a medium sized plastic container provided with a lid Wash 2/3 cup of dry Northern beans Add 2 cups of water Soak beans covered in the fridge overnight. Next day wash beans and cook for 60 min. Let cool down and wash again. Then set aside. Prepare the Spread Preheat the oven to 350 degree F Prepare the onion mixture In a skillet braise the onions until tender but do not brown (6 min) Add garlic and stir for 1 min until fragrant. Let cool down. In the Food Processor Add onion mixture Add beans, vinegar, cayenne and black pepper. Buzz until ingredients are smooth Fill into a gratin dish In the Oven Put the dish in the upper most rack Do not cover and bake for 25 min. Serve Serve hot in the same dish Garnish with a spring of rosemary Use Wasa Sourdough bread broken into smaller pieces for dipping. |
