A “no skills required” meal that is easily prepared in one hour and provides a satisfying experience.

This is a tasty and filling Curry that is easy to make and last in the fridge for several meals. The roasted tomatoes are a favorite supporting the sweetish taste of this curry.

Get in Advance:

 

1 small Cauliflower Head, broken into small Florets.

1 large Sweet Potato (1.5 lb), cubed to ¼ inch

1 large Onion, thinly sliced or chopped

1/3 cup of No-Salt Vegetable Broth or White Wine

3 teaspoons of minced fresh Ginger

1 tablespoon of Tamarac ground, use more if desired

3 cloves garlic, chopped

2 15 oz cans of low-salt diced Roasted Tomatoes

1 9 oz package of frozen small Peas

½ cup of chopped Cilantro

 

Have On Hand:

½ - 1 cup of No-Salt Vegetable Broth or white wine. However, do not add too much liquid.

Recipe

(Adapted from Esselstyn p256):

 

For 3 (generous)-to 5 Portion. (Prep 45 minutes)

 

Chop the hard Vegetables.

Break the Cauliflower Head into small Florets removing any stem parts.

Cut the sweet potato into small cubes

 

Sautee Soft Ingredients

In large casserole pure 1/3 cup of no-salt vegetable broth or white wine

Add thinly sliced or chopped onion and minced ginger

Cook covered for 5 minutes.

 

Add Spices

Add Tamarac (or curry powder) and minced garlic

Stir at medium heat for one minute.

 

Add Cauliflower and Sweet Potato

Add vegetables and just enough additional vegetable broth for providing liquid at the bottom of the pot (1/2 cup).

Cook for 10 minutes until they start to soften.

 

Add Tomatoes

Add tomatoes with juice, fold under and let simmer for 15 minutes.

 

Add Peas and Cilantro

Add peas and cilantro and simmer for 5 minutes

 

Serve

Serve with Bread/Toast and salad. Use Wasa Crispbread for fat-free alternative.

Came out great as intended, however, I chopped onion instead of slicing it.

Used plenty of garlic and ginger but used only 1 can of tomato. Absolutely great!
