Braised Potatoes and Curly Endive with Dill |

Dinner This is a very light and refreshing dish. Easy to
prepare, while paying attention to the endive’s cooking time, it will be my
favorite meal for hot summer days. |
Served
Curley endives (freshly picked on the CSA farm) are very soft and slightly bitter. They are refreshing when combined with braised dilled red potatoes. The added leeks and lemon juice make this summer meal a very light and enjoyable delight and the mint puts a finishing touch to it. |

Get in Advance: 1 bundle of curly escarole, washed and cut into ½ inch stripes and then pieces 3 leeks, washed and cut to ¼ in slices 1.5 lb small red potatoes 2 cloves garlic, minced 1 cup of chopped fresh dill Leaves of several mint springs, torn and chopped ½ lemon ¼ teaspoon white pepper powder Have On Hand: |

Recipe (Modified from publicradio.org/columns/splendid-table/) For 3 generous Portion. Prep time 60 min. Prepare the
Potatoes Heat 3/4 cup no-salt vegetable broth in big soup pot Wash red potatoes, do not peels Half, quarter or cut into ½ inch wide slices. Add potatoes Trim leaks, half length-wise, wash thoroughly, cut into ¼ in pieces and add Add garlic and pepper Cover and sweat for 15-20 min or until potatoes are fork-soft. Stir often. Prepare Curly Endive Wash endives carefully, remove wilted or brown leaves and central hard stems if present Bunch heads and cut into ½ inch pieces Set aside Prepare Herbs Wash and cut dill Wash and cut mint Mix potatoes with Endive, Dill and Lemon ATTENTION: Timing is important so that endives do not mush! When potatoes are done, add juice of ½ lemon, then fold under dill and finally endives. Cook for an additional 1-2 minutes only preventing endives to collapse into a green pulp. Serve right away BEFORE endives start to wilt because the greens will continue to warm while off the stove! Ready to Serve Divide onto plates, sprinkle with chopped mint. |
