The Weihnachtsstollen is a traditional German fruit cake made with butter, rum-macerated sultanas, candied citrus peels and a marzipan (almond paste) filling. However, this Stollen is refined to a special treat after a Saxon family recipes, handed down in 1925, by using as toping an almond crust that crowns the light and brittle but moist texture of the cake of only a touch of sweetness. It keeps for several months and definitely matches the other famous Saxon Dresdner Stollen, which has the traditional powdered sugar topping and is much denser and heavier.
