The marinated turkey requires a minimum of preparation, but some waiting time for the slow cooking to finish. It’s worthwhile, since the dark meat is unexpectedly tender, moist and full of flavor.

Bluefish has a mild fresh flavor and provides plenty of soft flaky meat. Baked in whine with lemon and fresh herbs it provides a satisfying meal even for those who are not enthusiastic about fish.

These are the best scallops available on the East Coast! Half the size of sea scallops but double the size of conventional bay scallops, they have such an aromatic sweet flavor and soft texture that they melt on the tongue even when eaten raw.

Atlantic mackerel is my first healthy choice of fish but it is unfortunately not always available. Bought as filets it is prepared in minutes. Its red raw meat cooks white and its characteristic strong flavor makes a most enjoyable fish dinner.

This Indian stuffed mackerel is absolutely delicious. Marinated first for an extra layer of gustatory complexity or baked directly, the rich flavor of the stuffing matches the wonderful dense flavor of this fish. A good red wine and crusty French Peasant bread complement it.

Arctic Char is one of the healthiest fatty fish (besides of mackerel) since it is land-based farmed and contains an abundance of mono-unsaturated and Omega 6 fats. It is a mild tasting fish of very soft texture and thus benefits from marinating with the flavorful teriyaki ginger sauce.

The stuffed whole-wheat bread is refreshing and light and served like an Italian Calzone with hot tomato sauce. It is so delicious because of its loosely packed vegetable filling (spinach and broccoli) and dry fluffy crust.

The fish has a very mild taste, an amazingly soft texture and no oily feel (like farmed salmon or chat have). It is out most enjoyable, once its 1200 fish bones were cutout locally by the fishermen in a skillful manner to perfection. Without any bones interfering big bites of the thick sandwiched filet are just heavenly teats.
