Spinach-Stuffed Whole-Wheat Bread

The easiest ad hoc dinner preparation possible because all ingredients can be stored till needed: Frozen whole-wheat pizza dough, two bags of frozen chopped vegetables and one jar of tomato sauce. If some fresh vegetables are available they should be added as well.

Served

The stuffed whole-wheat bread is refreshing and light and served like an Italian Calzone with hot tomato sauce. It is so delicious because of its loosely packed vegetable filling (spinach and broccoli) and dry fluffy crust.

Getting Started with Cooking Greens


 

Veggie-Dinners

 

 

 

 

Preheat the stove to 400 degree F

Take frozen ingredients out of freezer: Pizza dough and vegetables.

 

Preparation of the stuffing:

1 10 oz package frozen chopped spinach

1 10 oz package frozen chopped broccoli

1 onion, finely chopped

2 garlic cloves, finely chopped

If desired: ½ red bell pepper

1 tablespoons olive oil

½ teasp coriander

½ teasp oregano

½ teasp basil

 

Mix all ingredients and cook for 10 min

Let cool down, drain standing fluid

 

In the meantime

Preparation of the dough

No need to work the yeast dough, use as it comes

Spread whole-wheat flower on table and start to rollout the dough to a 10 x 14 in sheet fitting on the baking sheet to be used.

Loosely fold up the dough, place it on the baking sheet and spread it out.

 

Making and Baking the bread

Place stuffing in the middle of the dough sheet

Fold the dough sheet one at the time over the filling. This will result in a double layer of dough on top of the bread.

 

Bake for 25-30 min on upper rack until crust is lightly brown.

After baking let cool down for 15 min

 

Prepare a side salad, heat 1 cup of Tomato Sauce and serve with a slice the bread.
