Slow Cooked Turkey Legs

This Mediterranean poultry dinner encompasses a slow cooked turkey leg with a baked potato and gravy, a small green salad with olive oil based dressing and the obligatory olive oil (1 tablespoon) with some whole wheat Italian bread for dipping.

Served

The marinated turkey requires a minimum of preparation, but some waiting time for the slow cooking to finish. It’s worthwhile, since the dark meat is unexpectedly tender, moist and full of flavor.

Getting Started with Cooking Greens

 

 

Use frozen or unfrozen turkey drumsticks,

 

Prepare Marinade:

2 tablespoons tomato Paste

1 tablespoons olive oil

3 minced garlic cloves (or 3 teaspoons garlic powder)

Juice of one lime

 

Prep Time: 30 min plus 3 hrs 200 degree F slow cooking

Day of Meal:

 

Bake in stove covered on middle rack

 

4-6 hrs 200 degree F

If meat is chewy it is not done and requires increased temperature.

When put into the oven while still frozen bake 5 - 6 hrs.

Meat was delicious, tender and moist and fell of the bone.

 

Serve

Serve with baked potato, bread and side dishes as desired like red cabbage, salad.

For Full-Course Dinner for special occasions:

 

German-Style Red cabbage

Ingredients

1 medium head red cabbage, wilted leaves removed, quartered, cored, and thinly sliced, and cross cut

3 green apples, peeled, cored, cut in 1/a8th and three times across

1 cup of water (from steamed red cabbage drip water)

1 small Russet potato, peeled and grated finely

4 all spice seeds

8 cloves (0r 1 quarter teaspoon of ground cloves)

½ quarter teaspoon cinnamon

1 tablespoon of agave Nectar

1 tablespoon of apple vinegar

Cook

Steam red cabbage with apples 10 min, if required work in batches

Place steamed cabbage/apple mixture in medium-sized sauce pot

Add water, grate potato directly into pot

Ass spices, agave sugar and apple vinegar

Mix thoroughly

Cook for 10 min

Turkey Gravy

Use one 14.5 oz can of Campbell’s Turkey Gravy, low-fat and low-salt

Warm up in small sauce pan

Ready to serve

Mashed Potatoes

Peel Russet potatoes, cut into small slices (may be 3-4 per potato)

Boil for 25 min, until they start to fall apart

Decant water, remove remaining water over fire by heating and shaking the hot pot

Use potato smasher to coarsely mash potatoes, use fat-free soy milk to adjust moisture

 

Until serving, keep potatoes war in covered serving dish over pot of boiling water

Leftovers were deboned, portioned and stored covered in the fridge. Next day serving: delicious.

This time I tried it for one portion only and served directly in the baking dish. In this way all the juices mixed with the tomato marinade made a great sauce for the baked potato. The sauce and the ½ tablespoon of olive oil from the salad dressing provided part of my 2 ½ tablespoons daily olive oil consumption.

Frozen Turkey Leg – Ready to go!

Slow cooked for 6 hrs at 200° F
